It has a removeable tray that holds the charcoal and you use the propane to heat the try to the point that the charcoal begins to burn. Then turn off the gas, wait for the coals to turn white and start cooking. If the coals go cold, you can turn the gas back on to complete the cooking.

Now I need to decide if I am going for just what I need, or get a fully loaded cadillac of grills.

It's a middle of the road type grill.
