Bebop's writing is genius IMO... great stuffs.

If you go by what Adult Swim has (mostly) aired, you can't do too wrong... ok, so Reign should be not just ignored, but outright hated, but other than that... Trigun is good, Wolf's Rain is amazing (done by the Bebop peeps), Samaurai Champloo is fun and well done (Bebop peeps + Kill Bill peeps), and once you feel good and comfortable, trash your comfort level with FLCL (but make sure you watch the series all the way through (it's only 6 eps long) at LEAST twice before rushing to judgement. The first time will leave you completely confused, the second time you'll understand that yes, there IS a plot... afterwards, it's finding all of the little "extras" they threw in).

And if you want WTF weird, check out Paranoia Agent.

That's one of the big problems with US-based series (animated, real life, literature, etc)... they seem to go on without any form of closure (Wheel of Time being horribly notorious and Sword of Truth isn't far behind), and then when they run out of time/money/viewers, they just vanish, again without a real "end".
