i've done mining and engineering - i'd recommend mining for sure, as it's a good source of income. not so much engineering.
can you do mining and herbs (whatever that skill is)? would be nice to be able to cull your own fadeleaf for blinding potions and stuff.

You're more than welcome to experiment on your own...if you want tips, I can help. Combat tree is the best for levelling.
